Phantasmic Assessment – Equilibrium’s First IPA With Phantasm

Equilibrium Brewery (Middletown, NY) released Phantasmic Assessment, an 8.5% ABV Double IPA with Citra, Nelson Sauvin, and Phantasm. Phantasm makes their “EQ Juice” even juicier in this beer. This combination of hops with Phantasm produces notes of tropical gummy bears, papaya, white wine, mixed berries, NZ earth, and “EQ Rainbow melon.” Boy, do I love those Nelson white wine and earthy aromas.

First, it was Fruity Pebbles. Then it was ice cream. Now, the hottest new ingredient in craft beer is Phantasm powder. Jos Ruffell of New Zealand’s Garage Project brewery invented and derived it from ground Marlborough Sauvignon Blanc grape skins. This powder produces Thiol precursors.

When brewed (correctly), these Thiol precursors produce a tropical fruit aroma in beer. You’re probably familiar with these aromas in some of your favorite IPAs. It’s not so much revolutionary as it is complementary to IPAs. It’s like adding bacon to a burger.

These tropical fruit aromas pair well with the already-delicious aromas found in your favorite hops. Brewers have been using Phantasm more in IPAs recently, and it’s only getting more popular. I just hope it overtakes cereal in adjunct popularity.
