Sometimes the forgotten style of warmer weather, the Saison can be a blank canvas for brewers. You name the ingredient, it probably has been put in a Saison by someone. This does not mean that simple recipe, well-brewed Saisons are not just as if not more amazing. Half Acre Beer Co. shows just how good these beers can be with their new release, Keeping Together: From the Outer Edge of Inner Space.
Half Acre only adds wildflower honey to this IPA-inspired, Galaxy-hopped, mixed-culture Saison. A mixed-culture fermentation is where the brewers use multiple yeast strains and bacteria to ferment a beer, rather than just a single yeast strain as most people are used to. The result can be something wild, funky, and new, with a different personality every time.
For this beer, the result is a huge tropical nose of mango, passionfruit, lychee, and a slight grapefruit undertone. The flavor delivers as well with pineapple, catty wine grapes, and pear. There is an ever so slight hint of the honey and white peppercorn as well.
A nearly bone dry finish supports the IPA inspiration, but the fruity notes lend the beer a slight perceived sweetness. The body, however, has all qualities of a Saison, with a medium-full body, effervescent texture.
