Holy Mountain Brewing is giving us a special treat with the VERY limited ale, Ex Supra.
Ex Supra is a mixed fermentation ale that they only pulled from two barrels. One of the barrels previously held Vermouth, a fortified wine flavoured with botanicals.
This blend was then transferred to oak barrels with Bing cherries from Diamondback Acres in Washington. Bing cherries are from the Pacific Northwest and are of the wild/sweet variety. Think more fruity and less tart. The blend sits on these for four months before being bottle-conditioned with Brettanomyces.
The finished product is going to have a very fine carbonation, with hints of sweetness from the cherry and vanilla from the oak. The conditioning with Brett will give it a slightly tart but not puckering sourness that compliment the flavors rather than outshine them.
